Noodles 면

15 Korean noodle dishes explained — what's in each one, how spicy it is, and how to order it.

Korean noodles come cold and hot. Naengmyeon (냉면), cold buckwheat noodles, comes in two styles: mul in an icy broth and bibim mixed with spicy sauce. Hot noodles include kalguksu (knife-cut noodle soup), janchi guksu in a light anchovy broth, and ramyeon.

Good to know

Naengmyeon noodles are long and very chewy, so the staff may offer to cut them with scissors. Add vinegar and mustard to mul naengmyeon to your taste. Cold soy milk noodles (kongguksu) are a summer dish, while kalguksu and sujebi are winter comfort food.
