More about Kalguksu
Kalguksu means "knife noodles": the dough is rolled out and cut by hand, so the noodles are flat and uneven and their starch thickens the broth. Clam kalguksu is a seaside favourite and chicken kalguksu a comfort dish, and many restaurants serve it with fresh, crunchy kimchi made that day (geotjeori).
