More about Pork Cap Muscle
Because each pig gives so little of it, gabeurisal is usually sold in small portions at pork BBQ restaurants that specialise in rare cuts (특수부위, teuksu buwi), sometimes on a platter with pork jowl and other cuts. It is grilled plain and dipped in salt or sesame oil so you can taste the meat itself.
Good to know
Its official name is 등심덧살 (deungsim-deotsal); 가브리살, the everyday name, comes from Japanese.
