More about Sikhye
Sikhye is made by steeping cooked rice in malt water until the starch turns sweet, then boiling and chilling it — that is why grains of rice float on top. Cans are sold everywhere, and it is served at holidays and after meals. Andong makes a very different red version with chili and radish (Andong sikhye).
